Creamy Breakfast Eggs From MasterCook
Ingredients - 8 slices toast - 2 Tbs. butter - 1/2 tube anchovy paste - 4 egg yolks - 1/2 C. milk - 1/2 C. stock - 1/8 tsp. nutmeg - 1/8 tsp. salt - 1/8 tsp. pepper - 1 Tbs. butter -- melted - 2 Tbs. parmesan cheese
Directions 1. Butter toast on both sides. 2. Spread paste on one side. 3. Then break egg yolks in a small pan, add milk, stock, nutmeg, salt, pepper and melted butter. 4. Cook slowly over low heat, stirring until slightly thickened. 5. When slightly thick, remove from heat and add cheese and pour over prepared toast. 6. Keep warm for 5 minutes and then serve. 4 servings.

I always make scrambled eggs for breakfast. But sometimes I want to try something different. Thank you for your recipe. It's tender, tasty, and nutritious. I always add a lot of cheese, because everything tastes better with it. I even saved it for lunch because I made too much.
